'7UP POUND CAKE made the old-fashioned way!! Moist on the inside, yet a slightly buttery crunch on the outside drizzled with a fresh lemon glaze. Recipe below... 7 UP POUND CAKE Preheat oven to 350 degrees F. Lightly grease and flour a 10-inch Bundt or Tube pan. Set aside. 1-1/2 cups butter, softened 3 cups sugar 5 large eggs or 6 medium eggs 1 teaspoon pure vanilla extra 1/2 teaspoon pure lemon extra 3 cups all-purpose flour 1/4 teaspoon salt 3/4 cup 7UP soda GLAZE 1-1/2 cup powdered sugar 1-2 teaspoons of fresh lemon juice 1-2 tablespoons 7UP soda 1. In a large bowl add butter and sugar. Beat with a hand mixer, or kitchen aid until fluffy. Add eggs, one at a time, beat until you can no longer see the yoke and egg whites. 2. Add vanilla and lemon extras. Beat well. 3. Add flour and salt alternating with 7UP, beating well after each addition and can no longer see the flour and 7UP. 4. Add cake batter into prepared baking pan. Bake for 1 hour and 15-20 minutes. Bake until a toothpick inserted in cake come out clean . 5. Cool in pan for 20 minutes before removing to wire rack to cool completely. 6. For glaze, whisk together powdered sugar, lemon juice, and 7UP until desired consistency.
